Who thinks vegetarian food is not yummy?

Well, as you might know I’m not a vegetarian but I love vegetarian food.
I always have the idea that it is quite difficult to make it, but a couple of weeks ago I learned a few lovely recipes at Nathalie Sommer cooking class, and trust me, they are so easy to make!
If you think vegetarian food is not yummy, I dare you to try this recipe! You won’t regret!
Quinoa San Choy Bow
Ingredients:
1 cup quinoa
1 small grated carrot
5 sliced mushrooms
3 tbsp tamari
2 tbsp sesame oil
1 tsp ginger
2 tbsp coconut oil
Buttercup lettuce
Directions:
Cook the quinoa until soft
In a frying pan add the coconut oil with the ginger, cook for 1 minute, add the mushrooms & cook for another minute then add the carrot & cook for a further 30sec. Turn off the heat & add the quinoa with the tamari & sesame oil & mix well together.
Serve this beautiful mix on top of the lettuce and get your hands on to eat it!
